Huauzontle, commonly known as Aztec Broccoli is the shoots of a spinach family plant. Commonly eaten throughout Mexico it is an excellent source of calcium, phosphorus, fibre, vitamins a, c and e, iron and potassium. As in grains like quinoa it does contain small quantities of bitter tasting saponins. Remember, you can have too much of a good thing!
Cook as you would conventional broccoli - steam, sweat, stir fry.
