Produced by Lynher Dairies in Cornwall, an award winning semi-hard cheese wrapped in nettles. Yielding a yummy, creamy, lemony flavour, Cornish Yarg is soft on the outside and wonderfully crumbly in the middle. The outer, edible nettles look fantastic on a cheeseboard, keep the cheese moist whilst adding a delicate hint of mushroom earthiness to the creaminess near the rind.
Directions for Use
Wrap in wax paper, store below 8 degrees, serve at room temperature.
It's all about the Nettles!
Foraged from local hedgerows and fields in spring, then frozen to ensure a year long supply. Nettle wrapped cheese goes back centuries. The leaves, which attract naturally occurring moulds, are brushed onto the cheese in concentric circles. Each "nettler" has their own style and they alone can identify each other's handiwork. As the cheese matures, the edible wrap imparts a delicate, mushroomy taste and develops its unique bloomy white appearance.
