In 1998 the Spierings family moved from the Netherlands to start dairy farming in the UK only to find years of poor milk prices made the project untenable. Returning from college in 2012, the youngest son Giel found a "For Sale" sign on the farm gate & fought to make the business viable via diversification into the production of Cornish Gouda Cheese. The rest is award winning history.
Using milk from their own pedigree herd this sustainably produced cheese is certainly field to fork produce. Our selection of mature Gouda is aged 10-12 months maintaining a rich, complex flavour whilst still holding a great moisture level. Handcrafted to a traditional Dutch recipe, this mature Gouda fills your mouth with lingering delights of fudgy creaminess, along with a beautiful crunch from the crystals which form around 8 months & are relatively small.
